|Roast Beef (and two veg)
|The traditional Sunday roast was the
|time the whole family got together to
. enjoy good food and conversation.
|1, 6-7 lb sirloin beef on the bone
Sea salt, rock salt or table salt as a rub
|Preheat oven to 450 degrees
Place salt-rubbed roast into preheated oven for 25 minutes
. then reduce heat to 325 degrees
Cook for a further hour and your roast should be well done on the outside
. and still be medium on the inside. (I prefer medium rare so adjust your
. time and temperature to suit)
|Potatoes, yams, peas, beans, Brussels sprouts, beets, carrots, cabbage, asparagus, seasonal vegetables.
Roasted, baked, boiled, mashed, smashed, muddled, hot or cold. Makes no difference to me.
Vegetables are good for you. Have plenty on hand.
|Traditionally served with brown gravy (make plenty) and horseradish sauce
| and/or chutney.
|2 1/4 cups flour
1 1/4 cups milk
A little pinch of salt
1 tsp oil
|Combine above ingredients in a mixing bowl and mix, or whisk, into a smooth batter
. (Let stand for one hour!)
Spoon off two tablespoons of fat from the roasting pan and wipe a bit into each hole of a muffin pan .
. (or place spoonfuls of Yorkshire ''puds'' into roasting pan while the meat ''rests'')
Divide batter and place into muffin cups (do not overfill)
Place Yorkshire muffin pan into oven at 450 degrees (after roast is cooked and removed)
Cook Yorkshires about 15 minutes or until well risen and golden browned
