Red Onion and Black Olive Sauce
1/4 cup olive oil
2 red onions, coarsely sliced into rings
3 - 5 (depending upon taste) tablespoons balsamic vinegar
2 teaspoons sugar
Black olives, halved (I use at least half a can!)
Salt and pepper to taste
1 tablespoon of butter
Chopped fresh parsley (2 Tbsp) for color
I use either fettuccine, linguine or spaghetti.
. Also include a fresh green salad with bread or roll.
Heat the oil in a heavy pan. Stir in the sliced red onions to coat with oil.
Sprinkle with sugar and cook until onions are tender. Five minutes or until translucent.
Add the olives and balsamic vinegar. Add salt and pepper. Simmer for two to five minutes more.
Add in the pat of butter and stir to mix.
Sprinkle in the parsley, remove from heat and toss with your favorite hot pasta.
Sauce can be served hot or cold depending on the weather.
Usually enough for me, but this dish can serve two people if need be.
